3. Roasting chestnuts with @chefcarla_c ? ? ?

I am really getting into the holiday spirit today! Roasting chestnuts and listening to the @pinkmartini holiday radio station. Truth, I watched a Martha @marthastewart video for some inspiration for the chestnuts. A few years ago, I helped my friend Heather @hmeldrom style them for shoot but I haven’t worked them since. I had no idea (mama brain can’t remember) that they have two shells. ? Martha says in the video that pasty chef, Jacques @jacquestorres taught her that once you make the “x”in the outer shell, roast them in a 450° oven until the shells pop open. Then peel them immediately with a towel while they are still hot (this also works great for beet skins). If the inner skins are tough to remove, you can drop them in 320° oil for 30 seconds and then the skins pop right off. ? I put rosemary, lemon zest and salt on mine. Ella tried one and spit it right out? When Ed was little, his parents used to roast them right on top of our wood burning stove (yes, we live in the house he grew up in).
